I was mixing up some xtol and got interupted and ended up adding 500ml more than what was called for so in the end I had 5 liters plus 500ml. So how would I compensated for the over dilutions when developing.

Start using it 1+1 and mix 550ml stock plus 450ml water per liter working solution.
Or just ignore it, the error will probably vanish in the rest of the developing tolerances.
The advice above about using it diluted 1+1, mixing 5.5 parts stock to 4.5 parts water sounds good to me. Over stock Xtol you'll see increased sharpness, and slightly higher film speed as a result.
Kodak has great published starting times for Xtol 1+1 in their data sheet.
