Yes, iPhones can do slow motion videos, so you can capture the shutter moving. But it cannot analyze.

So you would get 1 frame at full opening for the 1/250s setting; 2 for 1/125s, etc. It's worth a try. For the aperture the answer is no. You can estimate the entrance pupil size but that's not accurate.
