Which 5x7 b/w film for deep tank processing?

From a casual search, it seems in 5x7 lower speed b/w film I can readily get TMax 100, Fomapan100 and 200 (also as Arista), and Ilford FP4+. Bergger 200 is also still available but for how long, I don't know as it was sourced from Forte.

I am somewhat unhappy about my results with Fomapan 200 5x7 developed on hangers in 3.5 gallon tank. I have had good results with Forte 200 4x5 size developed on 4-up hangers in same tank. Of the readily available choices above, which would be the most suitable for processing in either HC_110b, or D76 in deep tank?

I believe you'll get great results with any film with tank processing as long as you treat it right.
I do my 4x5's and 8x10's in tanks. I was having issues with classicpan 400 or forte-same film and efke 25 but not with ilford fp4. I think the problem was that i wasn't presoaking the film long enough. I doubled the time to 4 minutes and now i don't get the mottling streaks from top to bottom. I've also just started using 2 liter tanks that only fit 2-3 hangers for the 8x10's and 1 liter tanks for the 4x5 stuff. It's much more economical than mixing 3.5 gallons of anything.
