What to pack?

I'm leaving for Central Oregon for a 5 day trip. Baseing myself and family in Sunriver area. I'm thinking of bring my 8x10 with a 4x5 reducing back and my roll back or should I just bring my Mamiya RB?
Where can I go for some exploring?

The John Day Fossil Beds looks like a great place to visit and explore. Does anyone know if there is any RV camping/parking there? It isn't that far to go for me and I would be interested in visiting.
