I think I might go with a V750-M and I want to go ahead and get a holder to maximize what I get out of scanning 6x7 MF film. I am interested in wet mounting if that might help, so does that mean I should go with the "variable height mounting station" or is it the "dual MF film holder?" I'm a bit confused as to which I need.
Get the mounting station if you want to scan the rebate. Otherwise the dual MF holder is fine. I wouldn't bother with wet mounting unless you have old, dirty or damaged negs. Scanning is enough hassle as it is.
Agree with artobest. Be sure with the mounting station to ask for the wet/dry option, so you have the anti-newton ring glass for direct dry mounting. Works great.

That is the one I picked up. I haven't gotten around to using it yet, but I have to say I'm very impressed with the V750s scans of 120 film even with the stock holders.
I can't do it yet (one purchase at a time), but I'll likely pick up the variable height station in the near future. My interests lie in scanning 120, 4x5, and 5x7 negatives. I think it's the only thing available for 5x7 if you don't want to finagle something yourself.
I bought the betterscanning.com MF holder and ANG glass for my Epson 700 to scan negs from my Pentax 645n. It took a while fiddling with the height adjustments but the results are worth it. IMHO the Epson mf holders are pretty bad, they don't hold the film flat which the ANG glass does. With a flat neg the results of the height adjustment are apparent: sharp from edge to edge. Yes! This is why medium format is so good.
