I use rapid fix for all of my film and RC paper, I use Hypo check as well as count the number of rolls per gallon, I cant recall of the top of my head how many square inches of film per gallon.

You need a fix which can be used without STOP bath because part B of Diafine contains a bicarbonate and therefore it's not recommended to use an acid stop.

Yes, you can re-use a fix and you can check with a hypo check how much Ag+ ions are in the solution.
You can also count films let's say 500ml fix working solution about 6-8 films (a bit depending on the fix). Because modern technology film are blocking the fix process earlier the capacity is lower when using these type of films (Delta, Tmax, Acros).

I've been using rapid fix with diafine (just water stop bath for at least 30seconds) no problems so far. I use fotospeed's rapid fix.

The Diafine MSDS calls out Sodium Carbonate - not Bicarbonate. In any case, there is no need for an acid stop bath with Diafine a water rinse after the B bath works fine - in my experience. Diafine B baths made up of:
1. 20 grams per liter of Sodium Carbonate
2. 20 grams per liter of Sodium Metaborate
3. 20 grams per liter of Borax

All work ok with the Diafine A bath.

Somewhere in the APUG Developer Recipe archives is a Diafine Substitute Recipe:

Diafine Substitute A bath:

Water 750ml
Sodium Sulfite 35.0 grams
Hydroquinone 6.0 grams
Phenidone 0.2 gram
Sodium Bisulfite 6.0 grams
Water to make 1.0 L

A rapid fixer like TF-4 works great with Diafine

Be sure you rinse your film fully after the developer (or after Bath B of a two bath developer like Diafine). Either a stop bath or plain water will do for the rinse. Any regular fixer will do. Fixer can be reused. Capacity varies a bit with the type and dilution. For commercial products, the manufacturer usually gives guidance for both time and capacity on the bottle. Kodak used to give this guidance, which can probably be applied to other, similar fixers: Kodak Fixer: fix roll films 5 - 10 minutes, capacity 100 rolls per gallon; Kodak Rapid Fixer: fix roll films 2 - 4 minutes, capacity 120 rolls per gallon. Shelf life of a working solution of acid fixer is 1 - 2 months.

Sodium thiosulfate alone although not one of the "regular"
fixers will work well. About 16 grams of the anhydrous or
25 grams of the pentahydrate will do a roll of most films.
I use that amount in 500ml for 120. Quick to mix fresh
one-shot fix at time of use. No stop or rinse needed.
The dry 'concentrate' is good for years.

The capacity of slow or rapid fixers also varies with type
