My cookbook is packed away---I need to figure out how much by volume of sulfite I need to equal 10 oz weight. Rough estimate in 1/4 cups is close enough for this non-photographic application

This will be in fact about 10 fluid ounces or 20 tablespoonfulls. 1/4 cup is 2 fluid ounces, so 5/4 cup should do it.

well, no...not really but close enough when your measuring by the 1/4 cup full.
