Bright/light images with pasel like colors, how should I shoot? Over expose by 1 stop? Then, how should I ask lab to develop, push by 1/2 or 1? Thanks!

I think you should test a roll to see what looks best for you. I'd shoot 12 shots at ASA400, 12 at ASA320 and 12 at ASA200. Then send it to the lab for normal processing. No need for any of that push stuff. Possibly tell your lab what you're doing also otherwise they may correct the scans before printing and try to even things out.

Honestly you probably won't see much difference between 400 320 at 1/3rd of a stop, 200 ISO is just one stop different. If you want a test then shoot that 36 roll at wider latitude than one stop of bracketing. Shoot at 25, 50, 100, 200, 400, 800, 1600, 3200 if you really want to see a difference.

I've found that when scanned by a good minilab scanner, the colors go a bit pastel around +2 stops or more, with normal development.

I'd second the advice above. Bracket the heck out of a couple of rolls. Pick, say 3 or 4 scenes, and shoot a sequence of -2, -1, 0, +1, +2, +3, and +4. Add in half stops exposures if you want.

I did this with 400VC and 400NC. Note that your results might differ depending on how the lab scans and adjusts. Also note that 400NC and 400VC are going away soon to be replaced with the new 400.
