Sodium carbonate as alkali in the composition and carbon dioxide released during stop bath with acetic acid.
I have used sodium metaborate instead of sodium carbonate. My stock of sodium metaborate has finished and due to difficulty to find it in the market I have used water as stop bath.
If I use sodium metabisulfite or sodium bisulfite ( 1% ph 4.6 ) may I avoid this phenomenon ? Bath with acetic acid has ph 2.9 .

No, sodium metabisulfite/bisulfite will also create carbon dioxide when reacting with carbonate.

Beutler developer which I used at the latest 55 years ago I just gave a good rinse out with water - about 1 minute constant inversion was enough. I never had any problems.
