I got plenty of sodium ascorbate but only a little ascorbic acid. So can i substitute ascorbic for ascorbate?
 
Yep. Can't recall the conversion factor right off hand; you should be able to google it if someone doesn't chime in here.
 
I thought that there was an alkali involved...

something like...

sodium hydroxide + ascorbic acid ---> sodium ascorbate

or, maybe it was...

Borax (sodium something borate) + ascorbic acid ---> sodium ascorbate

anyway, I think there is more to it than a simple multiplicative factor.

Can you substitute ascorbate for ascorbic, or visa versa for
that matter? NO way. One is quite acid while the other
is more nearly neutral. Dan
