Hello.

I've heard it is a good idea to size each layer when doing multiple layer gum bichromate pictures to stop bleeding etc. and wondered if clear gesso would do the trick ?

I've never sized between layers of gum. I have had problems with gum flaking off when I double coated with gelatin size. (Had extra. Thought it was clever to use it up. It wasn't.)

I only size once in the right after preshrinking the paper. With diluted Polyvinyl Acetate. I've never had a problem with staining or bleeding. I used Gesso, granted it was pigmented, but didn't like how it looked. I might try an albumen size later, when I run out of the PVA.

If you have issues with bleeding, it might be that your emulsion is too thick, and gravity compresses the emulsion before it dries.
