If it is going to stay in the studio, then get the P. If you want to take the camera elsewhere, get the F.
The P is heavier and has asymmetric tilts and swings, which are great for beginners. A 4x5" P goes for $4-500 these days on eBay.
The F is more portable and has a handy swing and tilt calculator, which isn't as intuitive as asymmetric tilts and swings, but works quite well, once you're used to it. A 4x5" F goes for $2-300 these days on eBay.
Go to lfphoto.info for some good articles on getting started in LF. You might also look at Steve Simmons' book, _Using the View Camera_, which is aimed at beginners. You'll need a lens and lensboard, filmholders, a darkcloth, a light meter, and a few other odds and ends like cable releases, any filters you might want to use, etc.
