Do you recommend Ryzen 7 5600 or 5800x for fast lightroom and photoshop editing? Is there a difference between these 2 processors? I see all the data on them but I am not sure it makes a huge difference when you are editing....

Both processors should be more than enough for Lightroom and Photoshop.
RAM and GPU is more important than choice between 5600 and 5800. If batch processing is important you can look at benchmarks. Some filters will take time regardless of processor.
If you need to run Premiere or other application for video editing extra RAM and better processor can be useful.
