How is it that these lenses (the -G version) are useful for ULF? Doesn't seem like they'd be used as an enlarging lens; can they be used as a taking lens?

Optimum would be a subject 200" wide. But infinity is not out of the question.

Since you'll be making contact prints from a ULF negative I don't see why it wouldn't work... if it will cover your (unspecified) negative size.
