Then again my darkroom won't be completed for some time and that's where I think I really get to enjoy the look of grain structure. Scans are IMHO not quite the same.
They certainly aren't. I've been printing quite a bit lately, and often select the negs to print from scans on a HD. The negatives that I thought would be a problem because of their grain didn't much show it on the prints, and what was there was much nicer to look at than what was on the scans. Wish I had used Rodinal more, especially w/ the Tri-X negs.
One of the things the people on this site have done is made me want to try XTOL. Seriously, I'd never really considered it before and probably wouldn't without the input. I have to get set-up for routine development, though. I've been very lax and random lately.
5 liters is a lot of developer. For infrequent users, I would highly recommend Adox Rodinal. T grain films don't have much grain, Rodinal is cheap, and takes up zero space. I love XTOL, but I have a dedicated space, mixers, RO water on tap.
Adox has their version of XTOL available in a 1L packet, this would be a good place to start.
