I shuffle and don't seem to have problems with uneven development from having my fingers in the developer. It may be that because I use a larger tray, I can handle the sheets a little more quickly and efficiently, and there is more solution in the tray. I also rotate the sheets 90 degrees periodically for more even results, and that works better with a larger tray.
Having to mix more solution, of course, could be seen as a downside, but it seems a modest compromise to me.
