The non C have a single coating, the C has multi-coating and the KL's are the latest and the most expensive ones
The non C will tend to be a bit less contrasty.
Watch out for lens sepatation of the rear cell, on ebay you will see a lot of them: cheap but abused.

If you want to photograph your violins, why not look for a 150mm S(oft)F(ocus) complete with the 3 aperture plates ?
Sorry, I won one a couple of day's ago for $ 55,- ex shipping in E+ .
KEH has a couple of them around $ 100,- or a bit more. Be shure that the 3 aperture plates are with the lens !

Non-C n C are both great lenses. The main difference is in the coating but nothing earth shatering. Most of the difference is in an updated shutter as the flash pc mount location will indicate. Both have brass shutters n are easily serviced. Just be sure the shutter is working no matter which one you get. Either will give you beautiful results.

NONE OF THE 180s have rear cells as Peter still insists they do. I have been servicing these lenses for a long time n haven't ever seen any with rear lens separation. I'd like to see what Peter is talking about. Maybe post a link so we can see what the separation looks like? Peter did the seller tell you these lenses have separation problems or are you assuming they do by the pictures?
