There are different sorts of medical X-ray films: Spectrally unsensitized and sensitized. Thus at best you get films sensitized for two colours. Also contrast will be different.
Other than that making pinhole photographs with them would be the same as with conventional films.

Yes, but such film is not specified for use in conventional photography, so one must experiment and figure out what works for them. In my limited experience, it tends to have high contrast and tends to want a developing process that holds that back. Many such films have emulsion on both sides which can make them easier to damage during the development process. And as AgX points out, there are different spectral sensitivities available -- but note that none come anywhere near "panchromatic."

I have a number of galleries of my pinhole photos up on PBase and all of the 8x10 format has been done with Fuji H-RT X-ray film. So it can be done, it just takes some patience and experimenting.
