I'd like to develop 120 400tx in a Jobo at 75* F with Pyrocat HD 1 + 1 + 100. Does anyone have a starting point for development time testing?

With a diffusion enlarger on graded SG paper. It's 400tx and not the 320.

For printing with TXP-320 on a graded #2 silver paper I would suggest about 11 minutes at 72F with Pyrocat-HD 1:1:100, with rotary processing.

Just to report, I tried 9 minutes at 75*F with the Jobo on the slowest rotational settings. The negatives look pretty good. Perhaps they're a little on the contrasty side, but it's hard to tell without printing. (I only have a BW transmission densitometer.) I'll probably try 8 minutes next time if the lighting is at all contrasty. There's quite a bit of stain. (My BW densitometer say fb + fog is .33) Recently, I've been using Pyrocat with Maco Infrared (both the old stuff and the prototype) and Rollei infrared. Neither of these films showed much stain.

Sounds likely that your negs are on the contrasty side. I develop TXT 320 in a jobo on a beseler motor base in Pyrocat MC 1+1+100 10 minutes 68C and those negatives are good for Pt/Pd printing and a grade 1 silver paper. Great combo by the way.

In regards to the Tri-X 400, since you're in a jobo tank, you want to probably shorten this time appropriately, but with Pyrocat-HD 1+1+100, I've developed at 70*F, 8 minutes, after exposing the film somewhere around EI 160-200 to avoid a flat toe. Prints really well on grade 2 papers.
But of course the time depends on how the light is. My latest batch was in very bright sunlight, but I changed the agitation instead to every three minutes instead of every minute. That really helps hold the highlights back.
And I see a lot of stain on Tri-X film too, but don't judge until you print them.
