I shoot 35mm and started recently with 120 (Hassy and Mamiya)
with PanF+ Delta100 Delta400 along with FP4+ and HP5+.
(yeah, the only Kodak stuff I still use is HIE)
I develop almost exclusively in Rodinal and some DDX but I'd
love to have a go with Pyrocat-HD.
Does anyone knows if it's available in Montreal?
If you can order bulk chemicals then you can make it yourself, which i believe is what most people do. The recipe can be found scattered here on the site, but its also posted with a lot of data over on unblinkingeye.com. You can also order it pre-packaged from photographers formulary, but I've never done it that way. Good luck!
Pyrocat is a developer most people mix from scratch. Your best bet is to contact jdphotochem.com, who are based in Longueuil. I'm sure they sell all of the raw materials you will need.

I second jdphotochem. I get all my chemicals from the fine Lady running the show there now including all Pyrochat chems which you are, indeed, best to do from scratch.
