I have been given a Nikkor APO 480 f9 process lens and I am intending on building a camera for it. I can't find information on its coverage, however, so I don't really know which size camera to build. I'm thinking 11x14.

Does anyone know this lens?

The APO-Nikkor 480 f/9 will cover 11X14, but you will need to stop down to about f/45 for good performance on the edges of the field.

I used an APO-Nikkor 600 f/9 for a couple of years on 12X20 and it covered nicely when stopped down.

These lenses were made for indoor use so outdoors be sure to fit them with a good lens hoood.
