When shooting portraits my favourite aperture is f5.6 when focusing on the eyes. This is with a 90mm on a 35mm camera, or equivalent on larger formats. Do others have a favourite aperture for portraits at a given focal length?

With my 85mm f1.2L I tend to use f4.5 for head and shoulders shots, because I find if I focus on the nearest eye and use a bigger aperture the face can be sharp, but the ears and furthest shoulder can be out of focus.
