The main purpose of the photos I will be taking are snapshots, and often 2 or more people. As the option to adjust aperture on the auto point and shoots isn't there, is it better to only look at the manual options?
I was considering an auto, though it may not be the best option now.

Do you know Why/When you Adjust/Use numbers like f/5.6 and 500.?
You can learn "easy" enough. But do you want to.?
I was born in 1960. Every family had a simple camera that offered no adjustment to exposure.
We took pictures of people and things that were in sunlight or open shade..... snapshots as you say.
These days, for things like that, most people would simply use the excellent camera that is part of their cell phone.
Why a film camera.? Are you planning to go further than "Snapshots" at some point.?
Why do you want (or think you need) to adjust the aperture?
Any decent point and shoot will be fine for taking snapshots of people.
That's kinda what they are/were made for.
Don't over analyze it. Just get one and try it.
