I just picked up a super-cheap Nikon FE2 body that's missing the rewind knob.
The rewind shaft is inside the camera.
I've been fishing around with a thin L-shaped wire looking/feeling for a trigger point to open the back, but haven't had any luck.
I can't be the first person to have this issue...
Anybody have any advice or suggestions?

It’s not easy. I struggled with it and learned a lesson from a real live camera tech that a crochet hook has the strength to pull the release. He opened it in 1 second; I struggled unsuccessfully for days before taking it to him.
A crochet hook is a good tool for this. I think it has to be one of the narrower sizes. They are inexpensive at craft stores and good to have around. If you are looking down at the rewind shaft hole with the front (lens side) at 6 o'clock and the back at 12 o'clock, IIRC the thing you have to pull up on is at about 1-2 o'clock. It doesn't protrude very far into the shaft hole so is a little difficult to see.
