Need recommendations for b&w display prints scans or prints?

Greetings: New to the Photrio, this looks like a place for the knowledge I need. I want to create original b&w works for home display. I want wide dynamic range display prints under 24" square from a Rolleiflex camera and good lens.
I need advise on the workflow:
1. Shoot originals in b&w film origianals and commercially print and mount conventionally.
2. Shoot originals in b&w film, have film lab scan negs, and do post processing in Photoshop for tonal control.
3. Shoot originals in color negative film, have film lab scan color negs, convert to b&w and do post processing in Photoshop for tonal control.

I will be processing and printing at a USA lab (yet to be determined). I realize that the scanning and printing leave a lot out of my control. and now that i realize many scanners balance exposures, its hard to test for film speed, exposure accuracy, etc

Many thanks for the help, Im an old retired commercial photographer wanting to create some nice images, but the tech and the variables drive me to consult with you all here.

Do you want prints on fiber based paper vs resin coated paper? Do you want glossy semi gloss or matt? In terms of color, a few labs will optical print but most scan and print. With color all prints will be on resin coated. Depending where you live in AZ, Tempe Camera has an image center that will process both black and white and color. Wilson camera in Scottsdale is an all analog shop, they print both color and black and white, 11X14 should be available, maybe larger.

Thank you for your input. I’m not familiar with digital printing for exibition, but I will tend to prefer a semi Matte.
