I've started working with Centennial POP. The paper tends to curl quite a bit, and I was wondering how to flatten and mount this paper?

I flatten it in a dry mount press. Then I leave them sit under a sheet of quarter inch plate glass for a while. If they look like they are not flattening under the glass I put a couple of 5 pound bottles of chemicals on the glass for extra weight.

I hang my prints by one corner until all the surface water has run off. Then I dry them on screens and try to make them dry slowly as this helps reduce the amount of curl.

If I am framing an image I dry mount it.
