I have some old stock Delta 100 that I plan to shoot tomorrow morning. How can I achieve good contrast & detail without using a filter.Maybe rate the film a little slower?

If it's dated within the last 10 years and not been kept in warm, damp or very humid conditions it will probably be perfectly OK.
 
Mike, I've been shooting my Delta 100 at iso 80. It gives a lot of detail. The contrast is more an issue of processing time though.

Myself I like a dense neg that's been under-processed about 20%.

I would also warn against over-developing. That's the #1 cause of bad negs. Slight overexposure is not criminal, but too much soup usually is! Whatever your developer, take off a good 20-25% from the time given by Ilford, just to be on the safe side.
 
The Mat124 lenses are quite sensitive to flare. Use a hood (Often your hand will do, if its shadow is on the lens).
