Leftover Corian panel available near me, 68" by 25", white Corian.
Would that be suitable to make a sink with, by adding epoxied sides?

My current setup is a under-bed storage bin ,sitting next to a double-bowl stainless sink (draining in a bucket!)

I'm never one to discourage a valiant attempt at anything. My concern so far is what is the material you plan on using for the sides, assuming the corian will be the bottom of the sink and whether or not an appropriately watertight joint can be made.
Do you have the means to drill a hole in that stuff for your drain?
Typical sink bottom has a slight relief in it so that the flange of the drain assembly ends up flush or just a hairs breath below the main surface.
That hunk of Corian is also likely a heavy bugger.
