Can anyone give me an idea of the shelf life of citric acid, and EDTA/Sulphite mixes, used for clearing of prints in the Ziatype process?

I don't worry about keeping times. It is so easy and cheap to mix these that I do so fresh each time I work. I never carry over either of these chemicals from one session to another. When using them for a class I sometimes mix up enough to last for a month, but we still do not re-use them.

I was meaning when mixed with water. I ask because although I agree citric acid and sodium sulphite are cheap, the EDTA Disodium I bought here in the UK was not.
