when it comes to color 35mm film how far past the expiration date can I expect the film to still process like new film. In this case do some films work better that others?

in general, lower ISO/slower film keeps longer/better but the most important factor is storage conditions.
There is no rule per se on how old you should go but I'll give you my experiences.
I try to stay within roughly 5 years for color negative and 3 for transparencies if they have been stored frozen/refrigerated.
There is so much past date film on the market these days it's hard to resist.
I've found that the further beyond the expiry date you go, the biggest issue is consistency. For example a roll of film may print on a given filter pack, but the next roll will be off by 10cc or more. A big hassle if you're looking for a constant process without the need to hunt for the correct colour balance for each roll.
