I took a look at my VH. The material in there is fairly degraded, nonetheless, I've never had a light leak. The material between the two vertical metal bars on the open end is no longer higher than the metal bars, so effectively does nothing. The rest--the big C shaped chanel around the other three sides--is foam that sits a fair bit higher than the adjacent metal, maybe .3mm (eyeball guess) but is soft foam that compresses easily. The important point is that however much higer than the metal it is, it needs to easily compress so the film holder or roll back can full seat on the metal, since that positions the film at the right depth to match the ground glass. Also, you don't want so much foam there that it spreads out while compressing and potentially gets pinched between the metal surface and the film holder I'd say your guess of .2mm would work well.
