The bellows isn't removable - is it? It certainly was not on the rwo of this type that I owned.
The B&J 5x7 Commercial View, the grey tail board camera cannot focus a 90mm on flat board with the standard bellows...that much is certain. The bellows is too thick. I think that a recessed board may be your only option.

I might have to agree... The shortest I have shot with my 5x7 B&J field is a 150 fujinon W. While not impossible to get movements out of, the bellows is pretty stiff. I suspect that you might have to build a recessed lens board. I haven't seen many around, although it is a common size.
I made a recessed (about 1/2 inch) board for a 4X5 version of that camera that I had and it allowed a 90mm to focus, but not much more. Movements were practically nil.
