I worked in Jackson, WY at The Bunnery for several summers years ago and had the opportunity to spend much of my off- work time exploring the area, for which I shal always be grateful.
Just north of Jackson on the main road there are many "Scenic Turnouts" that offer nice, although somewhat generic, views of the mountains from the highway. There is a place called "Schwabaucher's Landing" (Schwambacher? Schwau...?) that is a landing for boats to get into the river that gives you a view a bit different from that from the highway.
The last time I was in the area, a couple of years ago, I went by D & D Camera Corral in downtown Jackson and got a brochure that showed you how to get to several good places for shooting, including the barn on Mormon Row and the remains of a cabin that was used in the movie "Shane". They were also very generous with their time talking about where they like to go.
