Fomapan 200 or 400 (SHEET FILM) recommendations / advise for an all around film.

How long is your standard processing time using Pyrocat-HD? Do you use the 20*C temperature, or some other?
I remember using it at 1+1+100, and virtually all films received 13 minutes developing time at 20/68 C/F.
All films were overexposed by about 2/3 stop. Mostly I used Tri-X and TMY, but also FP4+, TMX (EI 50), and some APX 100.
Then I started using Foma 400 a fair amount, and I ended up having to go with 10 minutes and I shot the film at EI 200.
 
I use the same times as you Thomas, usually only about a 1/3 stop below box speed. except Fomapan 100 & 200 where I shoot at half the box speed, I did some qiuck testing when I began using them. In t0eh UK I process at 20ºC, same in the Winter in Turkey but during the Summer there it's so hot I process at 27ºC.
