Foma RETROPAN 320 soft is unavailable except in flat large format sizes. Is there a substitute or similarly soft 120 or 35mm black and white film?

Is Studio Argentique out of 120? I bought several rolls recently (as well as 4x5), and they still have some 120 in stock... As far as something with similar unique characteristics, I really doubt it... You could always take a 400 speed, and expose it at 100 (or more), then pull way back on the development time. That is pretty much what 320 Soft looks like to me, anyway...
