Normally when I process my 35mm color film it tends to curl towards the emulsion as it dries, but I've had a couple different rolls that are curled significantly in the wrong direction, away from the emulsion. One Ektar and one Portra. I haven't changed anything about my chemistry or the way that I process the film. The one thing I'm guessing it could be is a difference in ambient temperature? It has been significantly warmer in the room in which I'm processing the film lately.

Does anybody have any idea what it might be?

Hang the film in the bathroom with a steamy shower and that should relax the curl.

They actually end up perfectly flat after sitting in my print files for a couple hours. I just thought it was weird. I kept checking the negative to see which side had the emulsion. Do you know why they might be curling backwards? I've never seen that before.

Film curls because one side dries at a different rate than the other. Changes in ambient temperature and humidity during the drying stage can have a large effect on that.
