I'm going to try making a large print on roll paper (only set up for graded paper right now) and have found a couple options. I want to try J&C Nuance but I'll have to wait for them to open up shop. Meanwhile, I see B&H has Bergger (expensive) and Kentmere Bromide and Kentona. Are there other choices out there? Would Dektol be fine with Kentmere Bromide?
Try to keep an eye open. I just bought three 42" rolls of forte polywarmtone off ebay for $99 a pop! (yes - I'm gloating!). Just look frequently - and do google searches! You'd be surprised at what's out there if you just do a bit of homework...

The only thing to watch out for is - depending on your lightsource... you'll PROBABLY need about a grade softer than whatever paper you're doing 8x10 with. It's a reciprocity thing... but try to take samples of the same paper and place them at the locations of known highlights and shadows in the mural for a quick test and see where they land on the scale...
