I’m about to shoot some Verichrome pan that expired the year I was born. 1968. Is adding 3 stops sufficient?

How much do you have?
3 stops of extra exposure imo would be way too much....

I had the same type of film in a 120 Agfa camera that I was gíven in the early 2000s I finished the roll and had it developed by a lab I knew nothing of film processing nor how long the film had been in the camera so it was certain the lab just treated is as a normal film.

The negatives including those that I had taken all came out fine and some were of scenes that were clearly from the early 1960s so all of this is leading me to say that the film was over 40 years old

Not quite as old as your film but it suggests to me that unless I was very lucky your adding 3 stops may be too much

I don't have any left but i used a bunch of old V pan with no issues.
I'd give it half a stop and full development.
I was using 10 min in Pyrocat HD
