I am using an Epson V500 scanner at present and the results are quite good, that is, if the film to be scanned in the strip holder is perfectly flat. When a film is newly processed and dried, there is always a curl along the length of the strips which sometimes means the film does not lie in exactly the optimum plane to get a sharp scan. As this scanner is about 4 years old now and given good service, I thought perhaps an upgrade to a V700 may be in order, but only if there is a better method of holding the film in a more satisfactory way.

Has anyone any thoughts on the idea?

I use the Epson V500 and like it quite well. I use the Better Scanning Anti Newton Glass for both the 35mm holder and the 120 film holder. If the film gets too curly I can tape it to the glass and get some excellent results.

The V700 will handle 4x5 negatives so if that is important then you might want to make the upgrade.

I have scanned the same negative in both scanners. The Betterscanning holder for the v500 will help for a lot less than a v700, and will also allow scanning more med format frames at once, as the channel is longer. The Epson holder for the v700 is still not so good for curled negatives and the betterscanning holder would help here too. The resolution of the v700 is better than the v500, but for medium format, the difference doesn't jump out at you.

here is a thread with my comparison
