I've spent the better part of the day cleaning old processing trays. What
are those annoying divots doing on the edge of Patterson trays. Impossible
to clean and as useless as teats on a boar hog. Anyone have any idea why
they are there?
 
If it's like mine, they're there to prop a thermometer.
 
You can also use them to prop tongs so they don't go for a swim. They work great with my Kostiner tongs if I remember to put the trays right-way-about before I start.
 
Was hoping for an answer that outweighed the annoyance factor of trying to clean them. Thermometers and tongs are less of a problem in a climate controlled environment used by one person who is pretty careful with things like tongs. Perhaps I will feel different when I'm a few days past the episode of cleaning up other people's messes.

Or when you get old like me, and your tongs keep falling in the soup!
 
Wide shoelaces soaked in tray cleaner are your friends.

I use the divots to position my re-purposed small silicon kitchen tongs.
 
Perhaps my question should have been, "What is a really good tray cleaner?" I used dish soap, Bar Keeper's Friend, Polident and Clorox. Any other suggestions?
