The Film Developing Cookbook by Troop and Anchell. That's the bible for developers, even if you don't mix your won chemicals. Lots of useful information.

Yes, it's a great reference, but don't accept everything it says as chapter and verse, especially with respect to newer film technology and materials. There are a number of anecdotal and speculative perspectives included that don't seem to square with what many others have experienced.
