I have just bought myself a Digital Projector which I hook up to my Laptop to project the images. The recommended resolution size of the image is 1200x800 pixels. I leave the DPI at 300. The images so far a re well saturated but the 'bite' given to the edges is sadly lacking even though I know I can print them up to and above A3 size with little drop in sharpness. Any tips would be appreciated.

Your projector is capable of displaying almost 1MP. So project them smaller, or sit farther away. There are full HD projectors at 1920x1080 which will have better resolution, but that will still most likely not resolve all the detail in the files, since it's only a bit over 2MP.

The DPI setting in digital fils is meaningless for most uses. Only the total pixel dimensions matter.
