"Count Up" vs "Count Down" Frame Counters...What Is Your Preference?

Not necessarily. (Some of) the Canon Rebels advance the film to the end when you load them, and then rewind the film one frame at a time when you expose it.
And as you work through the film, the frame counters indicate how many frames are left.

My Canon Rebel counters reset when a new roll is loaded, then it rolls the film to the end, keeping track of how much film was wound to get to the end, and then it counts down toward zero.

My Minolta Rapid 24 has auto-reset counter and I'm pretty sure (can't check at the moment) the counter goes down. Might be because Rapid cassette film only came in 16exp flavour?

Off hand, with my poor old addled brain I could not tell you which way my various counters run. I simply keep an eye on the up/down direction when winding on between frames.
So no preferences here.

The one that does get me though is when using bulk loaded film.
After cutting off a suitable length of film, it is pot luck as to which end of the film I tape down to the spool.
The result is, some negative sheets count up from the start, and some negative sheets count down on the edge numbering of the film.
It can confuse a little when making a series of test shots, and comparing sequential pictures with notes.
