I recently bought an Omega C-700 black and white enlarger, and my cameras practically all have 6x9 negative size. To my understanding, the c-700 only goes to 6x7. What are some good Kodak Cameras (preferably folding cameras from the early 20th century) that I can enlarge with my enlarger?

Well, you can still enlarge 6x9 negatives, you just need to crop.

Keep an eye out for the Beseler 23c enlarger. They sometimes show up on craigslist and such and they handle 6x9.

That's what I'd suggest.

Enlargers being plenty and cheap

I don't know the market in Virginia or the US in general. I only know that enlargers covering 6x9 are neither plentiful, nor cheap where I live. So it really depends on local availability.

I have read that others have filed out a 6X7 to 6X9 negative carrier and the C700 will cover with just a bit of light fall off in the corners. If you have the color head it might cover without any fall off, but you would need a 90 or 105 enlarging lens. Before you try that made sure that negative stage is large enough for 6X9, mine looks as it will, but I did not pull the head off to measure.

Why not buy a 4"x5" enlarger and the problem will go away. (y)

6x7 is, to the most part, a more modern frame size than your target camera group.

So to use a 6x7 negative carrier with 6x9 film, just cropping parts of it out, what lens would I need?

Usually around 90-100mm or so. The usual lens is usually the “normal” for the format, so 35mm you use a 50mm lens, 6x6 you use an 80mm, 4x5 you use a 150mm.

What were some cameras with that size but maybe no as old?

Mamiya RB67, Pentax 67, Mamiya 7, Fuji GW670, the relatively modern Fuji 6x7 folder, Bronica GS-1 and a few others. They tend to be more expensive though.

There are also 6x6 cameras that should be considered.

Any Kodak ones?

Probably not.
But I happily use my 6x9 Kodak Tourist negatives with my enlargers that are theoretically limited to 6x7 (LPL 7700).
I either use the negatives cropped using the standard 6x7 carrier, and essentially full frame in a slightly modified glass carrier.

How do you do it in the 6x7 carrier? Just center it to where an equal amount is cut off on each side?

Position it the way that makes most sense for the final print.
I also make contact proof sheets of the entire roll, and store it with the negatives.
Something like this excerpt - of some 6x7 negatives in this case:
