Hey, the OP started it. Sometimes to old lube just needs to be thoroughly cleaned away and replaced. I hope that makes scents. If not then in future I'll try better to stink to the main topic.

I wonder if Gitzo is sourcing the rubber parts from China. A lot of rubber from China has an odor. I think it's caused by excess sulfur, but whatever it is, it really stinks! Gitzo might have gotten a substandard batch. There have been problems come to light recently of Chinese molding shops fraudulently using domestic sources of plastic instead of customer-specified high quality sources such as DuPont. If it happens with plastic, it can happen with rubber.
If only your hands smell, and not the grip, there might be a reaction taking place with the oils in your hand. You could try cleaning the grips with diishwashing detergent and water; if that doesn't do it, try isopropyl alcohol.
Or just complain to Gitzo and offer to trade your grips for new ones.

Not really relevant, but a few years ago a friend of mine bought some lock-together plastic/rubber building bricks for his little boy. They had the strangest smell, not the rather nice "new tyre" rubber smell, more of a sickly latex, and they actually caused a allergic itchy reaction on his hands. The doctor suggested it might be some kind of cheap organic solvent in the rubber, and, sure enough, my friend's son recovered within a day of the bricks being thrown out.

I was also thinking that smell change would be next in the odor of things to do.

It's very important to clean one's gitzo regularly-- though if it's out gassing that won't help this particular problem.
Maybe it would better not to touch it with bare hands...

I remember somewhere that someone posted about how he dissembled his Gitzo tripod, cleaned it, and assembled it back and used kind of grease for locks, but not sure if he mentioned that rubber perfume for that similar brand new rubber/leather smell, i hope i can find it and see if it will help me.
