Just wanted to report that you CAN do 5x12 in a 3005 Jobo Expert drum. The film does stick out a little over the top of the tube, but it manages to get even development anyway. Someone else here gave me this hot little tip, but I was skeptical. I ran three sheets, to see if it would work as promised and lo and behold, it worked! So I thought I'd pay it forward to anyone else using or contemplating the format and concerned about tray processing.
On a side note, if 5x12 works, 7x11 will also fit, and not even protrude from the tubes. Less than 1" of the 5x12 sheet sticks out the top of the tube, so a 7x11 will fit even better. With the 5x12, I curl the sheet so that the film is oriented toward the inside of the drum, with the emulsion facing out, to make sure the developer cascades properly into the tube.
