Does sheet film typically dry flat, or with a slight curve? Does the way it is hung have much of an impact and do the cheaper films (foma, lucky) have any problems over the bigger brands?
 
It should dry flat. Maybe if you're in a humid environment, that could affect things. The normal way to do it is to hang from one corner.
 
Don't know about the others, but5x4 Tri-X and TMY-2 always dry flat for me. I hang them from the notch corner to dry.

For me Arista and EFKE tend to curve a little but not enough to cause any problem and they both flatten out after a day or two in a negative sleave
 
Maybe you're using too much hardener in the fix? Or maybe the magical gawds of Ozzy land are just playing tricks with you. :D
 
I never had Kodak or Ilford dry anything but dead flat, summer winter anythime. Hang by a corner with a clothes pin with a wire hook over a line. You need to make the wire yourself and the plastic pins are predrilled.
 
Kryzs - Ilford sheet film dries perfectly flat in my Brisbane shower. I hang it by one corner

I never had a problem with 4x5 film but I do get some curl with 8x10. Enough so that a piece of glass is a necessity for contact printing.
