The V750 in my experience is excellent for medium format and larger film sizes. It pays to have a BetterScanning film holder (and set it up right) and good scanning technique.

The only thing that really intrigues me is the fact that I can fine-tune focus with a knob. Definitely can't do that on my Epson without buying a BetterScanning holder and adjusting it.
For reference, I'm using the stock film holder on the Perfection 3200.
So, I got the betterscanning holder. Excited, I loaded it up. I tried it at it's supposed 0.0, 0.2, 0.5, 0.6, 0.8mm height settings, to no avail. So I said, F*ck it, and put the neg directly on the glass, with the betterscanning ANR glass on top. Best sharpness i've ever seen.

For quick scans of roll film I recommend the Digitaliza from Lomography.com. Cheap, very quick mounting, reasonably flat, easy to shim to optimal height.
But for final scans, the betterscanning solution is the best.

...And skill, if you've never done fluid mounting before. Plus, you need to spend as much as an afternoon adjusting the height of the betterscanning to get the film in the perfect plane. It is not a process you want to rush.

I would buy the MF holder in a heartbeat, but if I were to move upto the V700 in the future, the 2450 holder becomes incompatible.
I used to use the Betterscanning holders with ANR glass with an Epson 2450. I primarily scanned 6x6 film and was very satisfied with 8x10 carbon transfer and palladium prints.

You could try a glass insert for the holder from betterscanning or direct from a manufacturer. It flattens the unruly neg, although at the cost of introducing some dust unless you're very careful.
I am using epson V500 and betterscanning holders for MF film. Default epson holders are really flimsy. Some films curve slight to extreme. betterscanning holders ensure flatness of the film but the sharpness isn't eart shattering. They are very easy to use and quite helpful for some films.

@Jeff, as is often said around here, if you have a V700/750, you need a betterscanning holder to get the best out of it. The investment is not great, but the results are.

I get great 35mm scans using the betterscanning holder. I use the universal holder and tape the negatives, which is not hard at all once you get used to the process. I don't currently bother with wet mounting with the betterscanning universal mounting station - not much difference I can see. But...
Wait for the 120 from Plustek. It will be better than the current line-up. How much better we don't know, but this looks promising.
Also, have you tried the betterscanning holders for your V700? They're not so bad to use, and really make a hell of a difference to scan sharpness. Day and night.
