Congrats; this is much better than your first trials.

How have you managed to control the blown-out/very contrasty highlights?

By exposing it correctly. I have to turn the exposure dial to darken slightly to compensate and it also seems to depend on just how much contrast is in the scene as well (see the cheese pictures... one pretty white chunk of cheese and a dark background and it doesn't work quite as well as this one).
