Maple Syrup, yum!

Discovered maple syrup a few years back when relatives in Canada sent some over...wow..it's great!

I grew up on maple syrup and nearly puked the first time someone gave me the fake stuff. We used to go to a sugaring off celebration at the Herkimer Home on the edge of town (Revolutionary War General's home) - even sap and half-boiled syrup is tasty. I've never seen it on this big a scale, though. Some of my HS friends make syrup just by boiling it on a camp stove.

Tony I'm really surprised to hear you "discovered" it, I've always had it since I was a kid, I guess it comes from being from this area of the world, winger said it best about the fake stuff.I actually thought this was a "small" maple/sap boiler haha, I have seen even larger, but I guess this is fairly big.It was a small shack, this was the 50mm lens on my RZ remember, so that's like 25mm in 35mm terms on the 6x6 back. Fairly wide, it was a small shack They actually had a reverse osmosis machine that cuts down 50% of the water before they boil off the rest, this makes it more efficient and faster to boil I guess. Go get some! That fake high fructose corn syrup stuff is gross :/

Yeah it wasn't heard of here until the seventies really, a North America thing. Seems to be everywhere now, but the genuine article is hard to find... as you say, there is no substitute.

That's ok, we still don't have Vegemite ... I just want to know what it tastes like... More motivation to visit I suppose

In the scheme of things, this is a small set up. In a place near my home town they have evap trays that are at least 2x6m surface area, and run three tiers of them. Commercial runs use vaccuum evaporation, so there is litle to see but lots of stainless steel. Vegimite and Marmite wer things I was exposed to while working in Australia. Lets just say I never developed a taste for them. I like my yeast experience from the primary fermenter when making beer or wine, and my salt from the shaker, not my breakfast spread. I first though your leak was the light spilling in the door you were taking the shot from, so it was not all bad.

That's good to hear about the light leak not being a distraction. However the leak only seems to be on the images from when I changed backs. :/
